Roasted Veggie Pita Wrap

Prep Time: 30 minutes
Ingredients:

  • 2 pita breads
  • ½ cup roasted bell peppers
  • ¼ cup roasted zucchini
  • 2 tbsp hummus
  • 1 tsp olive oil
  • Salt to taste

 

 

Method of Preparation:

  1. Roast the bell peppers and zucchini with olive oil and salt in a preheated oven at
    400°F (200°C) for 15 minutes.

  2. Spread hummus over the pita breads.

  3. Layer with roasted veggies.

  4. Roll tightly and slice into halves. Serve warm.
