    Prep Time: 20 minutes
    Ingredients:

    • 1 pizza base (cut into halves)
    • ¼ cup roasted vegetables (zucchini, bell peppers, onions)
    • 2 tbsp pesto sauce
    • 2 slices mozzarella cheese
    • Olive oil for brushing

     

     

    Method of Preparation:

    1. Spread pesto sauce on one half of the pizza base.

    2. Layer with roasted vegetables and mozzarella cheese.

    3. Place the other half on top to form a sandwich.

    4. Brush the outside with olive oil and grill on a panini press until golden and crisp.

    5. Slice and serve warm.
