Tortilla Breakfast Roll

Prep Time: 20 minutes
Ingredients:

  • 1 tortilla
  • 2 eggs
  • ¼ cup diced spinach
  • 2 tbsp shredded cheese
  • 1 tbsp olive oil
  • Salt and pepper to taste

 

Method of Preparation:

  1. Whisk eggs with salt and pepper. Scramble them in a pan with olive oil.

  2. Add spinach and cook for 2 minutes.

  3. Warm the tortilla and layer the egg mixture in the center.

  4. Sprinkle with cheese and roll tightly. Serve warm.
